Caledonia Australis was the vision of a group of wine enthusiasts in the early 1990s to create quality Burgundian style wines in Gippsland. Embracing the principles of minimal winemaking intervention, applying contemporary technology as appropriate, this wine collective achieves similar or superior results to traditional techniques. The results are wines of classic style and outstanding quality.
This exceptional chardonnay is a brilliant pale lemon in colour and exhibits very youthful citrus/honeydew aromas which overlay delicate mineral hints. Oak and malolactic characters are very much in the background, lees-ageing has made its usual creamy/almond contribution, and subtle savoury aromas add further complexity.
The palate is finely structured in a medium-bodied style. The fruit flavours tend towards lemon and apple, supported by fresh, slightly racy acidity. Oak contributes almost subliminal flavours and a hint of structural firmness, while the creaminess from yeast-lees contact provides a seamless texture. Promising length and complexity, combined with the wine's great freshness, suggest fine ageing potential.
